Summer has just started, and it has been bringing us weeks of blistering heat already! Although I am blessed with a well-insulated and cool home, I do try my best to keep it that way. So as soon as the temperature rises over 25C I put a lock on both the stove and the oven, and resort to what I lovingly call “cold cooking” – which truth be told, doesn’t involve any cooking at all. It is a sure way to keep the house cool for as long as possible! I’d like to take this opportunity to share my favorite and healthy no cook meal recipes with you, perfect for the summer days yet to come.

Cantaloupe and Mozarella Caprese Salad
A modern twist on a classic dish: This caprese salad with cantaloupe, mozarella and savory shreds of prosciutto looks mouthwatering! With the little mint sprigs this makes a perfect salad for a hot summer day.
Quick Nori Rolls with Cucumber and Avocado
Who doesn’t love sushi? The only problem is cooking the rice; a tedious job which uses quite a lot of heat. These Nori Rolls require no cooking at all, but will provide you a healthy, refreshing – and with the avocado – filling bite to eat!
Healthy Tuna Stuffed Avocado
We stay on the avocado-bandwagon a little longer with this dish which features the fruit whole (well actually, half)! The cilantro makes the dish nice and fresh and the jalapeno’s provide a little extra heat.
